Parmesan Meatballs

Its been a really long time since I’ve posted a recipe, but here’s a new one finally! These meatballs come out very yummy, tender and not at all dry. The photo isn’t the greatest, but I promise the meatballs are delicious!

Ingredients:

  1. 2 lbs ground beef
  2. 1 cup grated parmesan cheese
  3. 1.5 teaspoons garlic salt
  4. 1/3 cup cilantro (or parsley if you’re one of those cilantro haters)
  5. 1/4 teaspoon pepper
  6. 1/2 cup of italian bread crumbs
  7. 1 egg (beaten)
  8. 1/2 cup of half and half

Instructions:

  1. In a large bowl combine ground beef, parmesan cheese and 1 egg. Mix well with a fork
  2. Add garlic salt, pepper and cilantro and mix
  3. Add half and half and mix in (the half and half makes them tender and not dry)
  4. Allow the whole mixture to sit at room temperature for 30 minutes. This allows it to marinate well
  5. Heat frying pan on high heat with a coating of pam or olive oil. (you can also bake them, see alternate instructions below)**
  6. Take 1 tbs of the ground beef mixture and roll it into a ball
  7. Roll the meatball in a light coating of italian bread crumbs
  8. Place each meat ball on frying pan and turn heat to medium and cover
  9. After about 3 minutes, carefully flip the meatballs over and turn heat to low. Cook them covered for about 15 minutes total (check by inserting in a fork to make sure its not raw inside)
  10. Serve over pasta with sauce of your choice

** If you prefer to bake the meatballs, preheat oven to 325 and place meatballs on cookie sheet. Bake for 20-25 minutes until they are done
