Its been a really long time since I’ve posted a recipe, but here’s a new one finally! These meatballs come out very yummy, tender and not at all dry. The photo isn’t the greatest, but I promise the meatballs are delicious!
Ingredients:
- 2 lbs ground beef
- 1 cup grated parmesan cheese
- 1.5 teaspoons garlic salt
- 1/3 cup cilantro (or parsley if you’re one of those cilantro haters)
- 1/4 teaspoon pepper
- 1/2 cup of italian bread crumbs
- 1 egg (beaten)
- 1/2 cup of half and half
Instructions:
- In a large bowl combine ground beef, parmesan cheese and 1 egg. Mix well with a fork
- Add garlic salt, pepper and cilantro and mix
- Add half and half and mix in (the half and half makes them tender and not dry)
- Allow the whole mixture to sit at room temperature for 30 minutes. This allows it to marinate well
- Heat frying pan on high heat with a coating of pam or olive oil. (you can also bake them, see alternate instructions below)**
- Take 1 tbs of the ground beef mixture and roll it into a ball
- Roll the meatball in a light coating of italian bread crumbs
- Place each meat ball on frying pan and turn heat to medium and cover
- After about 3 minutes, carefully flip the meatballs over and turn heat to low. Cook them covered for about 15 minutes total (check by inserting in a fork to make sure its not raw inside)
- Serve over pasta with sauce of your choice
** If you prefer to bake the meatballs, preheat oven to 325 and place meatballs on cookie sheet. Bake for 20-25 minutes until they are done
